
Try something a little fun and a little different with these delicious steak frites recipe. Served with a delightfully acidic chimichurri to balance this dish.

Steak:
- 2 steaks (2lbs) of your choosing(It seems like a sin, but we purchased pre cut stir frying steak from our local store. Feel free to use what you’re comfortable with.)
- 1/4 tsp (1.5g) baking soda
- 2 tsp (12g) salt
Fries:
- 2 bags (650g x 2)of crispy shoestring french fries (You can also make fresh fries if you are keen enough to do so. On busy nights pre purchased fries are much easier and are easy to make delicious!)
Chimichurri:
- 1 cup (25g) finely chopped fresh cilantro
- 1 cup (25g) finely chopped parsley
- 1/2 cup (12.5g) finely chopped oregano (I find purchasing 3 fresh bunches of herbs hard to go through. I like this recipe just as much when omitting oregano)
- 1 – 2 fresh garlic cloves (5g – 10g)
- 1 whole fresh jalapeno (15g – 25g)
- 1/4 cup (58g) red wine vinegar
- 1/4 cup (32.5g) olive oil
- 1/2 tsp (3g) salt
- 1/2 tsp (3g) cracked black pepper

Preparation:
- Preheat oven to 400ยฐF. Prep large sheet pan covered with parchment paper.
- Evenly spread the fries on your prepared pans, and place in oven for 15 – 20 minutes depending on your fries and temperature of oven!(You should rotate halfway to ensure extra crispiness!)
- Chop all of your parsley, cilantro, garlic, and jalapeno. In a blender, or optionally a mortar and pestle. Add all of your chopped ingredients, olive oil, vinegar and seasoning. Blitz for about 5 – 10 seconds to incorporate everything. Using a mortar and pestle creates a much more “rustic” mixture, but will cost you some time and elbow grease. Set aside.
- If you buy whole steak. Slice steak into strips against the grain in 1/8 – 1/4 inch slices.
- Season steak with salt and baking soda. Toss well to incorporate thoroughly (I know its weird but baking soda actually helps beef from tightening and losing all its juice. This also helps with browning!)
- Place a cast iron pan over medium high heat. Add 1 tbsp vegetable oil once hot. (Oil should be “rippling”, but not smoking.)
- Sear steak in pan for about 1 minute per side if you like a bit of red in your steak. 2 minutes per side for well done.
- Plate fries first, top with steak, and cover with your chimichurri. Keep some for the side because this stuff is DELICIOUS.
