
Put this together in 40 minutes with minimal prep involved. Put all ingredients on one pan and put it in the oven! This recipe we enjoy on those exhausting days when pressed for time.

Chicken
- 4 chicken breasts
- 1 tsp salt
- 1 tsp black pepper
Vegetables
- 1 head of broccoli
- 1 zucchini
- 1 large red bell pepper
- 2 tbsp olive oil
Seasoning:
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp garlic garlic powder (or 2 – 4 fresh garlic cloves)
- 1 tsp onion powder
- 1 tsp dried thyme
- 2 tsp smoked paprika
- 1 tbsp dried sumac
Instructions:
Preparation:
- Preheat oven to 400ยฐF. Prep large sheet pan covered with parchment paper.
- Season chicken on both sides with salt and pepper. Set aside
- Dice bell pepper in 1 inch chunks, leaving broccoli in full florets, and Zucchini can be cut in circles, or half moons.

- Place everything on your prepared sheet pan. Cover the chicken, and vegetables in olive oil and coat everything as much as possible. I find rubbing the oil in with my hands coats everything really and gets in all the nooks and crannys! Make sure to start with vegetables and then do the chicken.
- Use 3/4 of the seasoning mixture to cover the chicken breast and rub in well.
- With the remaining seasoning cover the vegetables and toss evenly.
Cooking:
- Place your chicken breast in a row on one side of the pan and vegetables on the other. Even all of your vegetables to ensure everything cooks evenly.
- In your preheated oven, on the middle rack. Place your sheet pan and cook for 25 – 30 minutes. Flipping the chicken and vegetables half way through. Cook until everything browns and the chicken reaches 165ยฐ internal temperature.
- Serve and enjoy!
