
This is a favourite in our household. Green bean casserole is quick, easy and most importantly cheap. Bring this meal together in an hour for a quick after work dinner!

Ingredients
Casserole:
- 1 can of cut green beans
- 1 can of cream of mushroom soup
- 1/2 Large white onion
- 6 large cremini mushrooms
- 2 Celery Stalks
- 2 – 4 chicken breasts (Cubed)
- 1 cup of grated cheddar cheese(or your preference)
- 2 tbsp Olive Oil
- Salt and Pepper to preference
Crispy Onions:
- Remaining half of onion (sliced in half moons)
- 1/4 cup Cornstarch
- 1/4 cup Flour
- 1 tsp Salt
- 1 tsp Pepper
- (optional – purchasing pre fried crispy onions)
Instructions
Casserole:
- Preheat oven to 400ยฐF.
- In a large microwave safe bowl, combine green beans, cream of mushroom soup, 1/2 cup of cheese. Microwave, mixture for 2 minutes. Stopping halfway and mixing.
- Dice half of the large onion, slice mushrooms, and celery.
- Dice chicken breast in 1 inch chunks
- Heat a large skillet on high heat, when hot add olive oil.
- Cook chicken until browned on all sides and when reaching an internal temperature of 165ยฐF. Set aside.
- Add onions to pan, and sautรฉ for 2 minutes until browned and soft.
- Add Mushrooms and Celery to pan and sautรฉ for approx. 5 minutes, until mushrooms and celery have colour. Stirring often to avoid burning the onions.
- In a 9 x 10 Casserole dish, combine vegetables, green bean mixture, mix well and spread evenly. (These Anchor Hocking casserole dishes are what we use and we love them!)
- Top with remaining cheese and crispy onions.
- Cook casserole uncovered in the oven for 15 minutes, or until the top has browned and sides are bubbling.
Crispy Onions:
- Slice half of the onion in half moons, and set aside.
- Combine 1/4 cup cornstarch, 1/4 cup flour, and 1 tsp salt, and pepper .
- Dredge the the onion in the flour mixture, and sift excess flour.
- In a large sauce pan, add 2 cups of vegetable oil(or neutral oil of your choice), and heat to 350 degrees.
- Fry onion in batches until brown and crispy (approx. 4 minutes per batch).
- Set aside on wire rack, and pan to catch oil, or on a bed of paper towels.
