Potatoes:
- 3 Large Russet Potatoes (Washed, Dried, and cut into 1/4inch “Dollar” slices
- 2 tsp table salt
- 1 tsp Black Pepper
- 2 tsp Garlic Powder
- 1 tsp Paprika (Ideally Smoked)
- 1 tsp Onion Powder
- 1 tsp Dried Oregano

Preparation:
- Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- Prepare the Potatoes: Wash the russet potatoes thoroughly and slice them into 1/4 inch thick rounds.
- Bake the Potatoes: Arrange the potato slices on the prepared baking sheet in a single layer. Spray or lightly brush the slices with cooking spray or olive oil. Season with salt and pepper to taste. Place the baking sheet in the preheated oven and bake for 30 minutes, or until the potatoes are tender and slightly golden.
- Smash the Potatoes: After the initial 30 minutes of baking, remove the baking sheet from the oven. Carefully cover the potato slices with another piece of parchment paper. Then, using a wide-bottomed cup or the bottom of a glass, gently press down on each potato slice to smash it slightly.
- Season the Potatoes: Remove the top parchment paper. Sprinkle both sides of the smashed potatoes with your desired seasoning mixture. This could include garlic powder, paprika, dried herbs, or any other seasoning blend you prefer.
- Finish Baking: Return the baking sheet to the oven and continue baking the smashed potatoes for an additional 15-20 minutes, or until they are crispy and golden brown.
- Serve: Once the potatoes are cooked to your desired crispiness, remove them from the oven and serve hot as a delicious side dish or snack.
